Distributing food during the cooking process must be done in a <u>regular and even way<\/u>, taking into account that the dough cooked<strong> directly on the refractory<\/strong> will be <u>cooked in advance<\/u>, due to the empty area of the bedplate which is hotter than the part \u00a0what has already been used.<\/p>\n<p>The refractory material also has this characteristic: after accumulating heat, <strong>it will transfer it into the oven walls<\/strong>. Thus, the heat\u2026 moves, and always chooses where to go!
